Here’s how to make them:
INGREDIENTS: (Serves 4)
– 1 tbsp olive oil
– Half an onion, finely diced
– 500g lean beef mince
– 30g taco seasoning (store-bought or homemade)
– 1 tbsp tomato purée
– 4 medium flour tortillas
– 120g reduced-fat Cheddar cheese, grated
FOR THE SALSA:
– 60g cherry tomatoes, chopped
– Handful of fresh coriander
– Juice of 1 lime
OPTIONAL TACO SEASONING:
– 1 tsp chili powder
– 1 tsp sweet paprika
– 1 tsp garlic powder
– 1 tsp onion powder
– 0.5 tsp dried oregano
– 0.5 tsp ground cumin
– Salt and pepper, to taste
METHOD:
1. If making homemade taco seasoning, combine all ingredients listed.
2. Heat olive oil in a large frying pan over medium heat. Add onion, then mince, taco seasoning, and tomato purée. Cook for 8 to 10 minutes, stirring occasionally, until fully cooked.
3. While the meat cooks, prepare the salsa by mixing chopped tomatoes, coriander, and a squeeze of lime.
4. Spread taco mince, cheese, and salsa on one half of each tortilla. Fold over to close.
5. Place quesadillas in an air fryer basket and cook at 180°C for 5 minutes, or until golden and crispy. Flip and cook for another 5 minutes.
